"I roasted these wonderful beans to City+ and was surprised to how good it tasted using both Espresso and Pour-over brews. If you are a roaster, I recommend extending the Maillard phase for 3 minutes and dropping 2 minutes after first crack. This will ensure you get all the right flavors out while at the same time maintaining some sweetness and acidity."
