Why Most Coffees Cause Heartburn
Green coffee beans naturally contain organic acids. Under the right conditions, heat breaks down these acids during the roasting process. However, other roasters, and massive commercial brands, tend to prioritize speed over everything else. This means that when they’re roasting their coffee, they aren’t doing it with Low Acid in mind. This is why when you brew most coffees, you’re left with a highly acidic cup that easily triggers heartburn and irritates sensitive stomachs.
The Art of the Slow Roast
At Gold Star Coffee, we roast by hand & eye, artisanal masters using a forgotten and traditional process. Our roasting equipment are from the turn of the century (1900’s) that are no longer used in the modern industry yet produce a superior roast with an unmatched depth in flavour. Due to this careful consideration in how we roast our coffee, we take our time to roast Low-Acid Coffee at a lower flame for a longer time.
As we take our time to slow-roast our beans at a lower flame, the gentle heat naturally melts away harsh acids, and breaks down the specific components that trigger stomach pain.
An amazing side effect of this slow process is that it makes the coffee naturally sweeter as the sugars inside the bean have had ample time to caramelize.
